Baked Breaded Catfish Recipe

Ingredients
Non-stick spray
3 large eggs
4 cups Italian bread crumbs (plain will also work if that is all that you have)
½ teaspoon dried thyme
Salt
Freshly ground pepper
½ teaspoon paprika
½ teaspoon onion salt
½ teaspoon garlic salt
½ teaspoon lemon pepper seasoning
Directions
Preheat oven to 400 degrees
Spray a shallow glass baking dish with non-stick cooking spray, thoroughly coating the bottom and the sides of the baking dish. Those that have a problem with things sticking to the bottom of their baking dish are advised to line the inside of the baking dish with foil, and then spray the foil with non-stick cooking spray.
Whisk together eggs in a medium-sized mixing bowl. Set aside.
Pour bread crumbs in a separate bowl. Set aside.
Mix remaining dry ingredients in a third bowl. Set aside.
Rinse catfish fillets under lukewarm water. Pat dry with a paper towel or allow time to air dry. If they are still slightly damp, that is fine.
After that, dip the catfish fillet in the bowl of the egg mixture. People that do not want to get the egg and breading mixture on their hands often prefer to use two forks for this step.
Following this, toss them in the bowl of bread crumbs. Catfish fillets should be thoroughly coated in breadcrumbs on both sides. Shake off the excess breadcrumbs back into the bowl.
