Catfish Stew Recipe
Ingredients
2 teaspoons virgin olive oil
1 small onion, finely chopped
I small clove garlic, diced
½ tablespoon chili powder
I can diced tomatoes
1 can stewed tomatoes
1 ¾ cup water
1 cup uncooked rice
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
10 ounces frozen okra, pre-sliced
1 pound catfish fillets, thawed
1 green bell pepper, finely chopped
Directions
In medium pot, heat oil.
Add onion, bell pepper, garlic powder, and chili powder.
Stir constantly over medium-high heat. Cook for three minutes or until onions feels tender to the touch.
Add remaining seasonings, rice, tomatoes, and water. Heat to boiling.
Reduce heat and cover. Simmer for 25 minutes while occasionally stirring.
While this is simmering, cut catfish into one-inch pieces.
Rinse and drain okra. Separate if frozen together.
Add fish and okra to the mixture.
Heat to boiling. Then, reduce heat and simmer for ten minutes. Catfish stew is done when the fish flakes easily with a fork.
Slow Cooker Catfish Stew
Sometimes, one simply does not have time to stand over the stove and cook dinner. That is when the slow cooker really shines. This delicious catfish stew recipe is designed for busy families that still want a home-cooked meal at the end of the day.
Ingredients
2 medium onions, finely chopped
1 small stalk celery, diced
2 small garlic cloves, minced
28 ounces diced tomatoes
Eight ounces clam juice
Eight ounces tomato paste
½ cup of water
1 tablespoon virgin olive oil
3 teaspoon Italian seasoning
¼ teaspoon crushed red pepper
1 pound catfish fillet cut into small pieces
Six ounces chopped clams
Six ounces crabmeat
Directions
Combine all ingredients except for seafood into a slow cooker. (Do not include clams or fish pieces yet.)
To do this, add one ingredient at a time and then mix well. This will ensure that the stew is mixed perfectly together.
Cover and cook on medium heat for five hours.
Stir in seafood, and re-cover. Cook on low for approximately one hour. Stew is done when the fish flakes easily with a fork.
