Ingredients

  • 3 catfish fillets
  • 1 cup milk
  • 1 egg
  • 1 cup yellow cornmeal
  • ½ tablespoon seasoning salt
  • 1 teaspoon pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic salt
  • ½ teaspoon salt
  • 3 tablespoons butter (more if desired or larger pan is used)

Directions

  1. Heat butter over high heat to ensure that the bottom is thoroughly covered in butter.
  2. Mix all dry ingredients in a bowl together.
  3. Combine egg and milk in a bowl together.
  4. Sit catfish fillet in the bowl of wet mixture and refrigerate for one hour.
  5. After one hour has passed, remove the fillets from the wet mixture. Dip them in the mixture of dry ingredients, and gently shake off any excess cornmeal from the fillet.
  6. After shaking off the fillet, place it in the pan of melted butter on high heat.
  7. Heat both sides approximately five minutes or until done. Because stovetop temperatures may vary, cooking time may also vary. It is important to keep an eye on the fillet to ensure that it is not overcooked.
