Grilled catfish has a place at every barbecue, especially in the southern states where catfish remains a household staple. Simply tossing catfish on the grill is not going to suffice, however. The perfect blend of herbs and spices as well as a mouth-watering marinade is critical to making sure that your cookout is a hit.

Lemon and Herb Grilled Catfish
This lemon and herb grilled catfish recipe provides the perfect amount of flavor to a cookout, especially for those that do not enjoy spicy food.
Ingredients
Juice from two lemons
Lemon pepper
Salt
Freshly ground pepper
Garlic salt
Onion salt
Directions
Clean catfish fillets and rinse under warm water.
Line catfish evenly on a cookie sheet or in the baking dish for preparation.
Sprinkle with lemon juice. Use a brush to spread lemon juice evenly over catfish fillets.
Sprinkle with remaining seasonings, using one at a time.
Flip catfish fillets over and repeat.
Then, catfish are ready to go on the grill. Heat them over medium heat for approximately five minutes, or until fish flake easily with a fork.
Spicy Orange Grilled Catfish
This recipe not only adds a certain amount of zest to an otherwise traditional dish but also helps guarantee that fish does not stick to the grill when they are cooking.
Ingredients
4 catfish fillets
5 sliced oranges
2 tablespoons paprika
2 teaspoons garlic powder
2 teaspoons freshly ground black pepper
2 teaspoons onion powder
1 teaspoon basil
1 teaspoon dried thyme
1 teaspoon cayenne pepper
Directions
Combine all dry ingredients in a mixing bowl together. Set aside.
Properly clean fish and rinse under lukewarm water. After fish has been properly cleaned, toss them in the dry mixture until they are evenly coated with the spice mixture.
Slice oranges into slices approximately one-half-inch thick.
Heat the grill to medium heat.
Place orange slices on the grill rack, and immediately place fish fillets on top of sliced oranges.
Then, cook the fish fillets as normal on top of the orange slices.
Fish will be done in approximately five minutes, or when they flake easily with a fork.
When cooking the fish on top of slices of orange, it allows the fish to absorb the juices to prevent drying out and to add additional flavor to the seafood for a mouth-watering dish.
Tip: Instead of sliced oranges, some people prefer a lemon and herb mixture and to cook their seafood on top of lemons. This has the same delicious results!
Prevent Drying Out
The primary concern when grilling catfish fillets is that they will become dry in the few minutes that they are on the grill. To prevent this, keep a bowl of marinade handy and properly marinade the catfish fillets as they are cooking. This will ensure that they are moist and tender as soon as they are ready to be eaten.
Don’t Over Cook
Another common concern is that the catfish fillets will be overcooked because they are done so quickly. To avoid this, take them off as soon as you think they are done. Remember, you can always put them back on the grill for a few minutes to finish cooking.
