Ingredients
3 cups almond flour or almond meal
Avocado spray
½ teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
4 tablespoons butter
Directions
Preheat oven to 350 degrees Fahrenheit.
Coat a baking dish (preferably glass) in foil. Then, spray the oil with avocado spray to prevent the fish from sticking.
As the oven preheats, prepare the fish for cooking. Start by rinsing the fish with lukewarm water. Pat them dry and set them aside on a plate.
Put the almond meal in a medium-sized bowl and set aside.
Melt the butter in a second bowl, set aside.
Mix the remaining seasonings in a third bowl and set aside.
Next, sit the bowl of melted butter next to the almond meal. This will make the next step easier.
Dip each fish fillet in the melted butter, and then place it in the bowl with almond meal.
Toss the catfish fillet in the bowl of almond meal until it is nicely coated. After this, delicately shake the catfish fillet. This will remove the extra almond meal so that it doesn’t clump on the fish while it is cooking.
After this, place the catfish fillet in the baking dish.
Complete this step with all four catfish fillets until they are in a nice line in the baking dish.
Then, sprinkle them with the seasoning mixture. Make sure to flip them over and sprinkle both sides with the seasoning mixture.
Last, cook the catfish fillets for approximately twenty minutes. It is important to note that cooking times might vary depending on the oven. For example, gas ovens are known for cooking catfish faster than electric ovens.
Make sure to flip the catfish fillets halfway through cooking to ensure even cooking of the crust.
They are done when the fish flakes easily with a fork.
These delicious catfish fillets are the perfect main dish to serve with a keto friendly dinner. They can be served with steamed vegetables. Another great option is to serve them with a baked dish that can be cooked at the same time as the catfish fillets, such as baked vegetable dishes.
