- ½ cup white cooking wine

- 1 small clove garlic (diced) or 1 tsp garlic powder
- 3 even tbsp brown sugar
- 1 teaspoon freshly ground black pepper
- 1 cup freshly diced onion
- ½ cup soy sauce
3. Smoked Catfish Marinade for Large Quantities
- 7 tbsp organic olive oil
- 8 tbsp chopped parsley
- 12 tbsp lemon juice, or 3 freshly squeezed lemons (add a few chunks of lemon to the marinade for additional citrus flavor)
- 1 tbsp lime juice
- 5 finely diced cloves of garlic
- 3 tsp cumin
- 1 tsp freshly ground black pepper
Tips
The marinade is essential. Smoking catfish can easily dry out the fish, leaving it less flavorful and tasting too dry. Combat this with marinade beforehand. Simply prepare the marinade, and then let the fish soak in it for an hour before using the smoking. This guarantees that any smoked catfish recipe will taste amazing.
